Recipe: Accordion Potatoes with Bacon and Cheese, Swedish Style

Tender on the inside and crispy on the outside, these accordion or fan-shaped potatoes are perfect with your favorite cheese and bacon.

The Swedish version of baked potatoes is called Hasselback, which impresses everyone who tastes it. The name comes from a tasty dish served at the Swedish Hasselbacken restaurant in Stockholm. Depending on preference, Seasonings and fillings can vary, from salt and pepper to herbs, butter, bacon, cheese, and anything else you want. How to prevent potatoes from oxidizing

Some vegetables, like potatoes, discolor when exposed to air, oxidize. To slow down this process with hasselback potatoes, remember that immediately after slicing them, put the raw potatoes in a bowl of water with a little lemon juice or vinegar.

For crispy potatoes

Soaking sliced ​​potatoes for a few hours in vinegar water will also remove the starch, allowing the potatoes to become crispier when baking.

Choose potatoes of equal size

Using potatoes of the same size helps them cook simultaneously and maintain an even color.

That way, you don’t risk cutting the potatoes too much!

You won’t risk cutting the potato completely using chopsticks attached to both sides when slicing it. Thinly slicing the potatoes allows them to cook evenly. In this way, you will enjoy golden, crispy potatoes.

Ingredients for two servings

  • 6 new, bigger potatoes
  • 50 g of butter
  • 50 ml of sunflower oil
  • 50 g of sheep’s cheese
  • 4 slices of bacon
  • 1 green onion
  • Salt
  • Pepper

Method of preparation

Preheat the oven to 450°C and line a tray with baking paper. Wash the potatoes, then slice them without completely separating them.

Mix the softened butter with the oil, salt, and pepper to taste. Brush the potatoes with this mixture, including between the slices.

Put the potatoes in the tray and bake them for about 50 minutes. Meanwhile, chop the bacon and brown it in a pan until it becomes crispy.
