In the following, you will find the best and easiest way to make this simple dish.

How to prevent potatoes from oxidizing

Some vegetables, like potatoes, discolor when exposed to air, oxidize. To slow down this process with hasselback potatoes, remember that immediately after slicing them, put the raw potatoes in a bowl of water with a little lemon juice or vinegar.

For crispy potatoes

Soaking sliced potatoes for a few hours in vinegar water will also remove the starch, allowing the potatoes to become crispier when baking.

Choose potatoes of equal size

Using potatoes of the same size helps them cook simultaneously and maintain an even color.

That way, you don’t risk cutting the potatoes too much!
